ZUCCHINI NOODLES & BOLOGNESE

Get the recipe for a spin on this classic Bolognese recipe. Rather than 'carby' pasta, zucchini noodles are used instead.

Ingredients

(2 Servings)

2 Zucchinis

1lb /450 g of Ground Beef

1/2 Cup of Coconut Milk

1/4 Cup of Tomato Paste

1 Cup of Spinach

1 Carrot

6 Mushrooms

1/2 Cup of Onions

2 Cloves of Garlic

1 Tbsp of Coconut Oil

1/2 teaspoon of salt

1/2 teaspoon black pepper

1 Tbsp of olive oil

DIRECTIONS​

  1. Chop the onions, garlic, and mushrooms.
  2. Wash 2 zucchinis and spiralize it into noodles. This is now zoodles.
  3. In a pan melt the coconut oil and add the onions and garlic
  4. Once the onions become translucent add in the ground beef and season with salt and pepper.
  5. Once the ground beef is cooked through, add the chopped mushrooms and spinach.
  6. In a small bowl combine the coconut milk and tomato paste and mix together until it forms a thick sauce.
  7. Add the coconut milk and tomato paste mixture to the skillet with the meat
  8. Turn the heat down to low and let simmer for about 10 minutes.
  9. While the bolognese is cooking saute the zoodles in olive oil for 3 minutes. You can also add a dash of salt and garlic powder
  10. Serve the bolognese on top of the zoodles
