VEGGIE OMELETTE

Do you like scrambled eggs? How about avocados? This veggie scramble served with avocados can be eaten for breakfast or lunch. Clean and healthy like nature intended it.

Ingredients

2 Lightly Beaten Eggs

1/2 Cup of green onions

2 Mushrooms

1/2 Tomato cut in chunks

1/4 Cup Chopped Onions 

1/2 an Avocado

 1 tsp Coconut Oil

1/4 tsp Salt

1/4 tsp of Black Pepper

DIRECTIONS​

  1. Add salt and pepper to the beaten eggs.
  2. Melt coconut oil to a well-heated pan.
  3. Add the vegetables with the exception of the tomato and saute for about 3 minutes.
  4. Add the eggs and cook for about 2-3 minutes.
  5. Flip to the other side.
  6. Continue to cook until eggs are completely solid.
  7. Top the omelet with the tomato chunks
  8. Serve with avocado slices on the side
