3 Eggs or 4 Egg Whites

1 Tbsp of Fresh Basil

1/2 Cup of Spinach

1 Small Tomato 

1 Tbsp of Coconut or Olive Oil

1/4 tsp salt


  1. Set your oven at 350F/175C and preheat.
  2. Chop the basil, tomatoes, and spinach
  3. Spread the oil in a muffin tray to reduce sticking
  4. Beat the eggs and salt
  5. Add the egg mixture to the muffin cup about 3/4 full
  6. Add the chopped vegetables to each muffin cup
  7. Bake for about 15 – 18 minutes then serve
