CHICKEN ALMOND BUTTER STIR FRY

Do you think almond butter is just a dip? Check out this chicken almond butter, stir fry and be amazed at the amazing flavor.

Ingredients

(2 Servings)

8 oz Chicken Breast

2 Cups of Broccoli

1 Red Bell Pepper

4 Large Portabella Mushrooms

1/2 Cup of Onion

1/4 Cup of Coconut Aminos

2 Tbsp of Almond Butter

1 Tbsp of Coconut Oil

1/4 tsp of black pepper

DIRECTIONS​

  1. Cut chicken and vegetables in small pieces
  2. Mix coconut aminos, almond butter, and black pepper into a sauce
  3. Melt coconut oil in a hot pan
  4. When the pot gets really hot (but not smoking) add the chicken to the pan and stir
  5. After about 5 minutes add in all the vegetables and then the almond butter sauce
  6. Cook chicken until no longer pink in the middle (7-10 minutes)
  7. Remove pan from heat and allow the sauce to thicken
  8. Optionally garnish with chopped green onions.
  9. Eat as is or with your favorite side such as brown rice
