BEEF FAJITA BOWL

Ingredients

(2 Servings)

8 oz Beef Sirloin Cut in Thin Strips

1 Red Bell Pepper Cut in Strips

1/2 Cup of Sliced Onions

2 Cloves of Garlic

1/2 Cup of Brown Rice

1 Avocado

1 Tbsp of Coconut Oil

Fajita Seasoning —>

3 tsp paprika or smoked paprika

1 tsp Garlic Powder

1 tsp Onion Powder

1/2 tsp Cayenne Powder

1/4 tsp of salt

DIRECTIONS​

  1. Add rice to about 1 cup of water and salt and then boil. Lower heat and cook per package directions or until soft.
  2. Add coconut oil to a pan (cast iron preferably) and place on medium heat
  3. Saute the onions and garlic for about 1 minute
  4. Add the beef strips to the pot and cook for another 5 minutes
  5. Add the red pepper strips along with the fajita seasoning spices and cook for about 3-5 minutes
  6. Mash avocadoes and add in optional toppings such as chopped tomatoes, onions, and garlic
  7. Serve the beef strips, rice and guacamole
