Get a healthier spin on this classic shrimp pad Thai with only a few wholesome ingredients.


1 Tbsp of Coconut Oil

6 oz Brown Rice Noodles

1/2 lb (8oz)  of Shrimp

2 Cups of Bean Sprouts

2 Cloves of Garlic Chopped

1/2 Cup of Green Onions Chopped

1/4 Cup of Coconut Aminos

2 1/2 Tbsp of Almond Butter

1 Tbsp lime juice


  1. Boil water in a pan in preparation for cooking the noodles
  2. Add salt to the desired taste
  3. Add the pasta to the water and plan to cook per package instructions
  4. While noodles are cooking, add coconut oil to a pre-heated pan
  5. Add the garlic and green onions and saute for about 30 seconds
  6. Add the shrimp to the pan and saute for 3 minutes, flip sides and saute the other side for 3 more minutes
  7. Add the bean sprouts.
  8. In a separate bowl mix the lime juice, coconut aminos, and the almond butter
  9. Add the mix to the pan with the shrimp and remove heat
  10. Serve with the noodles
  11. Optionally add red pepper flakes and cilantro garnish
