SALMON AND ASPARAGUS

Get this recipe for this everyday classic salmon dinner with only a few wholesome ingredients.

Ingredients

1 Tbsp of Olive Oil

4 oz of Salmon Fillet

1/4 Cup of Brown Rice

12 Asparagus Stalks

3/4 teaspoon of salt

1/4 teaspoon of pepper

1/4 teaspoon of garlic

Optional (dill)

DIRECTIONS​

  1. Prepare the rice by adding 1 cup of water and the rice to a pot.
  2. Add a little olive oil and about 1/4 teaspoon of salt to the rice
  3. Cook rice according to rice package instructions (cooking brown rice can sometimes take up to an hour depending on how soft you prefer it).
  4. While rice is cooking preheat the oven to 350F/175C.
  5. Prep the asparagus by trimming the ends and rinsing with cool water.
  6. Add the olive oil 1/4 tsp salt and 1/4 tsp pepper (and optionally dill) to the salmon
  7. Add the olive oil, 1/4 tsp salt, 1/4 tsp pepper, and 1/4 tsp garlic powder to the asparagus
  8. Bake the asparagus for about 20 minutes in an oven-safe bowl
  9. If you have a second oven, preheat the broiler (if not then wait until asparagus is finished baking)
  10. When broiler has reached the appropriate temperature add the salmon to a baking tray and set on the oven rack closest to the broiler (top)
  11. Broil salmon for 8 – 10 minutes (fillets less than an inch in thickness gets 8 minutes and an inch 10 minutes)
  12. Serve the salmon and asparagus with brown rice
